Paleo grain-free blueberry rolls
After two and a half years of following a grain-free Paleo diet, the thought of eating something that even resembled a grain kind of made my stomach hurt. But my friend Kristina became a fan of Paleo chef Danielle Walker of Against All Grain, and once she shared with me one of the rolls she made from Danielle's Grain-Free Hamburger Buns recipe, I was pretty much convinced. It was the strangest experience eating a grain-textured food - I truly have not had any kind of bread since I started eating this way back in 2012! - but the recipe is fully Paleo-compliant. It was a pretty delicious experience, and I walked away inspired to do some grain-free baking of my own!
I ordered the Against All Grain cookbook, picked up some of the ingredients I didn't already have on hand, including almond flour, coconut flour and cashews, and got to work. Thank goodness we have a food processor! It hasn't been used in a while, but it whipped up the most creamy and delightful batter than I may or may not have eaten a few bites of right off that measuring spoon there...
I formed the batter into buns on a baking sheet (my sweet husband ran out to the store and got me parchment paper so we could do it right!) and, on a whim, pressed blueberries into half of them before popping them into the oven for 25 minutes.
The result was simply delicious, if I do say so myself!
The rolls without blueberries were used as buns for the beef-and-bacon hamburgers Johnny grilled up for dinner that night. It was the first time in years I'd had a burger that wasn't lettuce-wrapped, and the grain-free bun was the perfect pairing to the mouth-watering burgers!
The buns with the blueberries were an absolute treat! The warm blueberries burst with every bite, and the coconut flour in the rolls made them just sweet enough for a delightful dessert. Even my grain-eating husband approved!
